Shishito peppers originated in Japan, and are similar to Padron peppers. They are named after a Lion's head, as the tip of the pepper looks somewhat like a lion's head. Shishito peppers are popular appetizer served pan roasted and with an aioli dipping sauce. Typically these are picked and served green, however for a sweeter variation let ripen to red. Shishito peppers are thin-walled so they cook quickly, and they are NOT spicy. Just fry in some olive oil and bit of soy sauce for 3-5 mins, add salt and serve warm. Shishitos can also be added fresh to salads. Plants grow to 24-30 inches tall in upright plant that benefits from a small cage or staking. Peppers are 2-2.5 inches long, with a wrinkly skin.
