Description: It's a standard Tojiro Gyuto with a 240mm blade. I believe their DP series has a VG10 core with an unnamed stainless cladding. It's hardened to 61-62 HRC and has a maple saya from chefknivestogo. There are some minot surface scratches on the left side near the heel of the knife from when I accidentally dropped it under a counter and had to retrieve it with a broom. The scratches are completely cosmetic and don't affect the cutting performance at all. This thig holds a crazy edge, and it will whittle hair off a high grit stone.
