The small grantons on the blade prevent food from sticking while cutting. The Classic series is Wusthoff's mid-range knife: Better than the Gourmet series but not as expensive as their top-of-the line Amici and Performer series. The forged blade is made from stainless steel, with a 0.5% carbon, chrome, molybdenum, vanadium, and 15% chromium ( X 50 Cr Mo V 15), which is a high carbon stain-free steel. Condition: Pre-owned.
